Collins 874 -3377 Corsicana Christmas pudding dates back to 1600 Plum pudding, or Christmas pudding as it is sometimes called, dates from the end of the 1600's. Of all other rich foods for feasting during this special season - creamy oyster soup or stow, fragrant roast turkey or goose with stufffing, roasted small birds, apple sauce, potatoes, breads, cakes and small cookies -- nothing was s.o ap- preciated as plum pudding. "It is manna," says an anonymous writer of the day. In her book, P,. P-J+-r / ""-', Virginia Kahl alludes to royal preference for the dessert: "All right," said the king, "I guess I can come, If you serve a pudding and that pudding is plum." Undoubtedly, part of the reason for the popularity stemmed from the im- parted fruits and spices that were part of the pudding. The rare spices were said to symbolize the gifts the Wise Men brought to the Christ child. Early pud- dings contained more meat than fruit but, as fruit became more available, it replaced much of the meat. And, of course, it's traditional to serve the plum pudding with hard sauce, a sweet, smoot mixture of creamed butter, con- fectioners '+ sugar and flavoring. Plum pudding could more accurately 'he called raisin pudding since raisins used to make the dish were called plums during the Renaissance in England. Despite being a misnomer, the name has endured. Mincement, often considered as delicious as plum pudding, also con- tained raisins rather than plums. In early days, its primary ingredient was minced meat (hare, pheasant, mutton, lamb or beef). Later, much of the meat was replaced by chopped, dried fruit and some suet. Fruitcakes were considered the thing for Twelfth Night celebrations, those beginning on the last day of the Christ- mas season, before Epiphany. These, too, were made with spices and dried fruits. In Yorkshire, however, spice cake was served on Christmas day with ale and cheese. The austere Pilgrims found all this merrymaking too close to pagan celebrations. They succeeded in outlawing Christmas festivities along with plum pudding;-mince pie and fruitcakes. A Massachusetts statue of 1640 forbade partying during Chritmas, Easter and Whitsuntide. But traditional baking flourished in American colonies not controlled by Pilgrims. DresseseSkirts !
